So, I just wanted to start this blog to keep a little cook book of my meals. To start off, my husband and I recently changed our diet to transition to healthier eating habits for multiple reasons.
We actually had started a food blog years ago. http://thadeechin.blogspot.com/ "Thadeechin's Favorite Stuff" (Thadeechin = "Fat Guy" in Malayalam). We also went to 100 restaurants in DFW before I went to PA school in 2012-2013, which I have listed somewhere in my old blog.... foods that we don't really eat anymore. Foods of our past.
Anyway, our diet mainly consists of eating meat 1x a week and during the rest of the days, we are pretty much pescetarian (fish, dairy, eggs, plant based foods) it's been really good so far. Really cut down on snacking also. Instead of chips (which we have put in the pantry way up high where I can only reach with a stool .... not worth it) we eat fruit like an apple with almond butter or P3, watermelon, turkey jerky. We have less healthy snacks too like small mochi hidden in the freezer, a bowl of peanut butter bumpers and milk (Brian's), or our favorite... vanilla cone/frozen custard. It's still a huge improvement from before. My husband is a huge snacker and I am typically a "monkey see - monkey do".
Today, I made a quick tempeh tikka masala dish. I typically just throw together what we have in the kitchen really. The masala sauce from TJs has a bit of heat, but not too overpowering, and some sourness. I adjusted it to my taste by adding some plain yogurt to cut down the sour level.
1 jar Trader Joe's Masala Simmer Sauce
1 package Trader Joe's tempeh cubed
3 zucchini cubed small pieces
1/2 yellow onion diced
2 garlic cloves minded
Salt and pepper to taste
I sauteed zucchinis until just softened then set aside. Sauteed the rest of the ingredients (except for sauce) until the tempeh is browned. Added back the zucchini and then the masala sauce. Simmer for about 5-7 minutes on medium-low. Salt and pepper to taste.
It was pretty good! I also added some oven baked catfish my husband's parents made. Def not authentic masala dish but does the job for a quick meal.
