Upgraded Lentil soup

Had to figure out something to pack for husband's lunch. Just sat on it for awhile... Watched a movie... Getting close to 11pm...so then decided throw some random ingredients together .. and it turned out well!

Inspiration... I could have just thrown that in his lunch bag 😂 

Always gives a dish a nice salty kick.

In the end, dressed the lentil soup up with sauteed shallots, kale, andcarrots then added veggie broth to thin it out.

Quick. Easy.

Vegetarian Meals

Before my trip, I had a fun pot luck with my girls I made Jackfruit BBQ pulled "pork" Homemade Coleslaw dressing After returning... went straight to my sister's for Thanksgiving... Turkey, ham, pumpkin pie, etc etc. First cooked meal at home: vegetarian jap chae with Zoodles and Carrot Noodles with my new spiralizer. Japanese Omelette. Known to be on the sweeter side.  I followed the recipe, but next time I will keep it more savory. Usually a rectangular pan is used, but I didn't want to go out of my way to get it. Recipe Must keep oiling the pan after finishing each roll. (linked recipe shows good pictures on oiling) Pour more batter, make sure to lift the rolled egg to get it under bc that will help prevent the egg from browning and getting burned. Repeat, repeat, repeat. Finally figured out the wide chopstick technique on my last flip. Mirin and Light Soy Sauce. So when you buy Mirin (Japanese cooking rice wine).... if are a stickler, you really need to look at the ingredients. Many have high fructose corn syrup. If you can't find it, I've found this substitute: Add between 1 and 2 tablespoons of sugar to 1/2 cup of white wine, vermouth, or dry sherry to replace 1/2 cup of mirin

Gumbo!

Wow. Well, I forgot how time consuming it is to make gumbo.  It's a really rewarding meal though. The more quality time I spent with my gumbo, I couldn't wait to eat it!  The nutty aroma of the roux made me know I was doing it right. This is prob the most nerve wrecking part because if it's burned, it's OVER. 9:00 PM and I've only added the holy Trinity: celery, Bell peppers, and onions It's finally done!!
