Japanese Eggplant Garlic Stir Fry

Another vegetable from the parent's plethora of veggies. I love Eggplant. I love how simple recipes can be and taste so satisfying.


Main: Eggplant, ginger, garlic, green onions.
Sauce: 2 tbs oyster sauce, 2 tbs light soy sauce, and 1 tsp of sugar, few splashes of water to thin out sauce

Stir fried the ginger first then added everything else. I seriously just added everything to my taste buds liking.

Decided to add a heaping spoonful to Give it a nice subtle kick of heat

Added this to mimic ground pork that's usually added to this dish.

Finished. Brown rice topped with the goods with a sprinkling of toasted sesame seeds and Sriracha.

I love it sauteed with green onions and shrimp. Seasoned with a little fish sauce. My mom mainly makes it into a soup which is really good too. Day old rice is the best to use for fried rice. Really quick one with celery, grated carrot, egg, and soy sauce 

Roasted Cauliflower

An all time favorite.  My father in law is a quiet man, but we know when he enjoys something.  One day, I just chopped up a cauliflower, tossed it in olive oil, paprika, salt, and pepper... then threw it in the oven at 450F for 30-40 min until nice and browned to your liking.  The next day, he brought home 2 cauliflower heads.
