Trader Joe Goodies

This is a strange, very unique find. I've been hunting for these for months bc I saw it on instagram. It finally came to Dallas. It has a tart flavor like dried cherries but not as sweet. Lots of added sugar though, but you can't really eat that much in one sitting in my opinion.

This is really good salsa. I love the flavor and texture that the pumpkin seeds add.

Seafood Paella!!!

So, my husband liked it, i was ok with it... it was just too fishy for me. Which he is usually the one to call that out. Not bad though, they really load it up with shrimp, calamari, and mussels

Tarte aux Champignons - Flat bread with Mushroom, emmental and parmesan cheese

We were pleasantly surprised... liked it a lot more than we thought. Crust was very flakey. Good flavors. Kinda floppy though. Maybe would cook it a little longer?

This is why I love TJs! There are so many new and unique foods to find everytime I go!

Bunch of cooking and baking

Making pumpkin brownies Recipe here All that turned into this. Honestly, the flavor was really good but coconut flour in this recipe gave it a kinda dense, chalky texture. Def would use regular flour instead. Always. Watching. Just fed up that I wouldn't give them some brownies Food haul? All my TJ goodies. Chocolate chunks were to make these with some leftover coconut chia muffins.  Love this stuff. It's muop xao hanh la tom. This squash is what luffas are made from. I love it sauteed with green onions and shrimp. Seasoned with a little fish sauce. My mom mainly makes it into a soup which is really good too. Day old rice is the best to use for fried rice. Really quick one with celery, grated carrot, egg, and soy sauce

Hatch Chile season

Hatch Chile season is Soo good. We love going to Central market during this time. They have an awesome hatch Chile cheddar popcorn too ($1.99/bag)  Well, this is an old recipe. Problem with most of these recipes is that I don't measure anything. I eyeballs it and adjust accordingly when I taste. 1 cup Low-fat plain yogurt 4-6 Roasted Hatch Chiles ( got mild, still has a kick) 1 medium ripe avocado Chopped cilantro Cumin Lime juice Salt and pepper Seriously threw everything in the food processor. Enjoy. So, we cut out chips and crackers, etc.. so we started to use this as a spread for our sandwiches and veggie burgers. Also, used as a typical dip with carrots. Good stuff.
