Vegetarian Meals

Before my trip, I had a fun pot luck with my girls I made Jackfruit BBQ pulled "pork" Homemade Coleslaw dressing After returning... went straight to my sister's for Thanksgiving... Turkey, ham, pumpkin pie, etc etc. First cooked meal at home: vegetarian jap chae with Zoodles and Carrot Noodles with my new spiralizer. Augh, I don't know why my pictures don't show up on some posts... but I am too lazy to fix it AGAIN. :\

New York Eats + Travels

Well, I've been gone.. definitely, not eating on the healthier side when on vacation. It was worth it. Walking for majority of the day into the late nights helped us walk off the calories... also sharing meals too.. which my husband and I do very, very frequently since the day we started dating. Others find that a little strange, but it helps us eat more variety! Totto Ramen: the men did were not impressed, but the ladies were happy with a hot soupy meal. Stayed at my old friend's place with her annoying fiance 😂 St. Patrick's Cathedral. Weddings do occur here! I can't imagine the rate 😶 FAO Schwartz: After a little riot outside because they tried to close 30 min early... they finally let people in. All we bought was candy. Worth it. Not sure why the lighting is so blue. Golden Unicorn: Dim sum! It was so good. Raymond was shocked how we order so much at once... isn't that how we always do it back home? New Yorkers.. Super Flakey Durian Dessert....

Sunday Breakfast

Daylight's savings had me up "early" so I wanted to make breakfast. Made a quick tamagoyaki with green onion and added some shredded mozzarella cheese on the last layer. Sides: TJs meatless breakfast patties, sautéed mushrooms and asparagus. Very filling for me. Not so much the husband.

Low Carb Eggplant Lasagna

GOOD STUFF! Recipe:  https://www.primaverakitchen.com/low-carb-eggplant-lasagna/ Great tip for the eggplant from the recipe: slice, salt, rest for 10 min. Press the moisture out of the eggplant slices with paper towels... t his is were I REALLY pressed and squeezed as much out as I could before I grilled them.  I find that it really helped reduce having watery lasagna.

Trader Joe Goodies

This is a strange, very unique find. I've been hunting for these for months bc I saw it on instagram. It finally came to Dallas. It has a tart flavor like dried cherries but not as sweet. Lots of added sugar though, but you can't really eat that much in one sitting in my opinion. This is really good salsa. I love the flavor and texture that the pumpkin seeds add. Seafood Paella!!! So, my husband liked it, i was ok with it... it was just too fishy for me. Which he is usually the one to call that out. Not bad though, they really load it up with shrimp, calamari, and mussels Tarte aux Champignons - Flat bread with Mushroom, emmental and parmesan cheese  We were pleasantly surprised... liked it a lot more than we thought. Crust was very flakey. Good flavors. Kinda floppy though. Maybe would cook it a little longer? This is why I love TJs! There are so many new and unique foods to find everytime I go!

Tamagoyaki

Japanese Omelette. Known to be on the sweeter side.  I followed the recipe, but next time I will keep it more savory. Usually a rectangular pan is used, but I didn't want to go out of my way to get it. Recipe Must keep oiling the pan after finishing each roll. (linked recipe shows good pictures on oiling) Pour more batter, make sure to lift the rolled egg to get it under bc that will help prevent the egg from browning and getting burned. Repeat, repeat, repeat. Finally figured out the wide chopstick technique on my last flip. Mirin and Light Soy Sauce. So when you buy Mirin (Japanese cooking rice wine).... if are a stickler, you really need to look at the ingredients. Many have high fructose corn syrup. If you can't find it, I've found this substitute: Add between 1 and 2 tablespoons of sugar to 1/2 cup of white wine, vermouth, or dry sherry to replace 1/2 cup of mirin
